I gotta give credit where credit is due. My dad is one of my biggest fans and I’m definitely one of his biggest fans. He is my inspiration behind all of this crock pot craziness. For christmas he got me the crock pot AND a personal cook book that he put together with much thought. Here is one of the pages in the book:
“O.K. O.K., I know you are tired of me expressing the virtues of crock pot cooking. That it’s like someone is cooking for you, that you come home and the apartment smells great, and there is a meal waiting for you. But its true! The trick is to assemble the meal the night before. Put everything in the crock pot insert and store the insert in refrigerator. The next morning, before you leave for work, pull out the insert and place in the crock pot. Set the time and go. I usually set for 10 hours on low. AFter the time limit is reached, the crock pot will revert to a warming mode. If everything is working o.k. The only glitch is if the apartment loses power. Even if the power comes back on, the crock pot will not. The next move is a mandatory throw the stuff out. God knows how long it was sitting there.”
- 2 frozen skinless chicken breasts
- 1 bag of frozen corn
- 1 can of black beans, washed and drained
- 1 large jar of salsa. You pick, mild, medium or hot
- just to make it hard, put in some cumin
- Set at low. Cook 10 hours.
- Open Crock pot. Pull chicken apart. Mix it all up. Serve on a tortilla.
