Chicken Tortilla Soup

Now this was a really fun day.  Eliza and I were brainstorming what we were going to make for crockpottuesday, which before I forget I need to announce that I have a twitter account and crockpottuesday is TRENDING. whoop whoop. I’m like a grandma on twitter and have to constantly ask Eliza what the freakin @ sign means and this # hashtag thing? But I’m getting the hang of it and nothing makes me happier than this crockpottuesday thing catching on! LEGIT. So, we decided that chicken tortilla soup would be a good choice and feed a lot of people. We made a list, put on our high heels (had to break them in! –Mary its the new me) and we headed to our local spanish grocery store. We easily made friends with the butcher, he was funny, and yes we’ll be back, and got all of these ingredients:

  • 3 cans diced tomatoes
  • 1 can of corn
  • 2 cans of chicken broth
  • 1 yellow onion
  • green onions
  • garlic
  • 8 chicken cutlets
  • cumin. lots. of. cumin.

So then its really easy. You dump all that in the crock pot, set it on high this time, for 3 1/2 hours. After it has cooked, shred the chicken and throw in some strips of cut tortilla. And this was daaaaank! In addition we served quesadillas, homemade guacamole by Katie Hukill, AND homemade sangria with lots of fruit (which was actually quite delicious and left everyone very buzzed). Our guest this Tuesday were Caitlyn and Russell. We love them and they brought very tasty cookies for dessert.  We had such a good time. We all started dinner by toasting Katie because she just got a promotion at work (yay congrats!), in the middle talked about real people stuff like jobs, and then ended with Eliza spilling sangria on my white jeans- success? I think so.

OH and we all made it to rathbones for Two for Tuesday…this was a lot for a Tuesday.

Success? Well-we all made it to work the next day or were productive on our day off!

    

p.s. The next day I went to Zumba with Caitlyn ( pretty much an awesome African dancing class and maybe one of the funniest things I’ve ever done) and I had some left over chicken tortilla soup before I went…yeah don’t do that.
